I love this homemade recipe for apple streusel coffee cake. it’s light, fruity, sweet, with a surprisingly crunchy crunch or streusel topping.
An apple streusel coffee cake, also known as an apple crumble coffee cake, is basically a coffee cake that has apples in it and an amazing topping. despite the name, it does not have coffee. it gets its name because many people over the years have enjoyed a slice of this amazing cake with a cup of coffee. I don’t drink coffee, I always enjoy a slice with a cup of milk.

step 1: gather the ingredients
To make this apple streusel coffee cake from scratch, you’ll need a handful of simple, everyday ingredients. you may already have them all at home.
- egg
- Buttermilk: You can make a homemade buttermilk substitute or use regular milk.
- granulated white sugar
- butter – or you can also use an oil like vegetable, coconut, etc.
- cake flour: You can also use all-purpose/plain flour if you don’t have cake flour.
- baking soda: you won’t need this if you’re using regular milk.
- baking powder: you will double the amount if you use regular milk.
- salt
- cinnamon
- apples: I like to use granny smith, but any apple will work.
- soft butter
- granulated white sugar
- flour – all purpose/plain flour
- cinnamon

- sieve
- beat
- spatula

step 2: how to make homemade apple streusel coffee cake
This coffee cake is super easy to make and the dough comes together in about 10 minutes. start by preheating the oven to 400f/205c. wash and then peel, core and cut the apples into small pieces. you can use an apple peeler/corer if you want, or just use a normal peeler.
then, in a large bowl, beat the egg and add the buttermilk, sugar and then melt the butter, either in the microwave or on the stove, until just barely melted and not hot. Pour in the melted butter as well and mix everything together.
you can use regular milk if you want if you don’t want to use buttermilk or use this homemade buttermilk substitute. I love adding buttermilk to cakes, because it adds a nice flavor and helps create a smoother texture.

now combine all the dry ingredients, cake flour or regular flour, baking powder, baking soda, salt, and cinnamon, in a strainer and place in the bowl. or place in a separate bowl and beat and then pour into the main bowl for the pie batter.
Beat the dry ingredients well until a good dough forms.
If you’re using regular milk, you won’t be using baking soda and you’ll need to double the amount of baking powder.
next, add all the apple chunks and stir to complete the apple streusel coffee cake batter. that was very easy right?
step 3: bake the apple streusel coffee cake
take an 8×8 baking pan or you can use something like a springform pan if you like or a 10-inch round pan, grease it with shortening, then flour it.
that is, after wiping a small amount of shortening into the pan, add a tablespoon of flour, then pat it around the bottom and sides, until just coated. then flip the pan over and scoop out the excess. this helps the cake not stick. you can also spray the pan with cooking spray.
Pour the finished pie crust into the pan and level the top with a spatula. set aside while you make the streusel or crumble topping.
time to do the topping. add the softened butter, flour, sugar, and cinnamon to a small bowl. mix it all together with a fork, until they look like small lumps of wet sand.
Then, use a spoon and sprinkle the streusel topping over the coffee apple cake until evenly coated. bake the cake on the middle rack for 25 to 30 minutes until a toothpick comes out clean.

After the Apple Crumble Coffee Cake is baked, remove it from the oven and let it cool in the pan for about 30 minutes.
step 4: serve it up!
Take a cake/cake spatula or butter knife and run it around the edges of the cake to make sure it’s loose. then cut it into 6 to 8 equal slices. how long does apple streusel coffee cake last?
Cover the pie pan with plastic wrap or aluminum foil and it will stay fresh for a few days at room temperature. store it in the refrigerator where it will keep for 5 to 6 days. you can also freeze the cake for a few months.
