In the world of specialty coffee, sometimes you need to slow down to speed up. Whether you take the time to carefully measure your beans, wait for the water to boil, or simply let the new bag of coffee rest before grinding, great coffee requires patience.

Nowhere is this more apparent than when making cold brew. you prepare your tools, carefully measure and weigh, pour out the water, and then wait. and wait. however, when you get the preparation right, boy is it worth it! so let’s discuss how to make your cold brew as sweet, refreshing, and delicious as possible.

Let’s start with the brewing equipment. No need to splurge here—any sealable container that you can keep in the fridge overnight will do just fine as a brewer. Some people opt for a mason jar or french press, others buy cold brew systems from companies like Toddy. or work!

An often overlooked brewing step is sanitizing your brewing equipment. Bacteria thrive in sugar-rich foods like coffee, and you definitely don’t want to give them easy access to your brew. be sure to thoroughly clean your carafes, coffee pots, and filters before beginning the process.

Let’s talk about grinding next. As always, we recommend using an adjustable grinding wheel. And as with all brewing methods, you’ll need a fixed brew ratio to achieve consistently flavorful results with your cold brew. We prefer a ratio 1:8: 1 g of coffee for every 8 g of water. to make a liter in the fridge you should be looking at around 125g of coffee. if you prefer much stronger beers, you can go down to a brew ratio of 1:4.5.

We suggest something just a bit coarser than you’d use for a standard pour-over. On a scale of 1-10 (10 being the most coarse), we recommend a 7 or so. One of the toughest things about making cold brew sweet and balanced is pulling out enough of the sugars to avoid sourness. Using a slightly finer grind than is traditionally recommended for this method should help you get there!

brew time depends on a few factors (temperature and grind size, for example), but 14 hours is a good starting point. no matter how long you prepare, it should always take place in the refrigerator. to limit the potential for bacterial growth, a cold cold brew is the way to go!

After brewing, it’s time to filter. Your method of filtering can vary, depending on your texture preference. For a cold beer with more flavor clarity and freshness, use a paper filter. you will remove a lot of the solids from the liquid. If you prefer a cold brew with more texture and weight, use cheesecloth or a fiber filter as you would with a toddy system. this will let more solids and oils through, and deliver something with a little more oomph.

Most people prefer to drink cold beer with a concentrate to water ratio between 2:1 and 1:1. if you like your coffee stronger, use the 2:1 dilution ratio. we prefer a little less intense so we would go with 1:1. which produces a final concoction familiar to most people.
