mike and i watched this youtube channel where this guy v-logs his days with his corgi. It’s endlessly cute because I love corgis and even cuter because he sometimes makes his food corgi friendly. this post has nothing to do with dog food. but the guy on youtube inspired me to try my hand at gram-style fluffy Japanese pancakes.

I’ve been on the fluffy Japanese pancake bandwagon for a while, but even though I’ve been busy making a lot of pancakes, today was the first time I tried making the kind of pancakes served in gram.

gram, in case you didn’t know, is one of the best pancake places in japan. I’m sure you’ve seen them floating around the internet: three incredibly billowy tall pancakes that are almost like pancake-shaped angel food cakes. Gram is notoriously busy – they only serve their pancakes 3 times a day and only sell a certain number of pancake plates. I think it’s because they take a long time to make.

Anyway, there is finally an open gram in the US, in San Francisco. And if you don’t want to wait in line to get one of the 90 pancake orders a day, try making your own at home!

As far as I can tell, the batter for gram pancakes is made the same way as other Japanese soufflé pancakes: with a well-beaten meringue. the main difference is that theirs are cased in small parchment paper molds.

I took a close look at the molds they use, thanks to this eater article, and they appear to be regular parchment, stapled together with a stapleless stapler. we buy the one we use at our local daiso, but they also sell them online. from then on it was just a matter of piling up the dough and hoping for the best.

I ran into a little problem, and that was that I only had enough batter for two pancakes instead of the classic three to the gram stack. but, in general, it’s not a bad mistake.

I held my breath as I flipped them over and removed the foil and then the parchment. success! I wish I had those giant fluffy pancakes that they have at gram because I would just sink into them with the satisfaction that gram pancakes can be made at home.

I think gram says it best: [the] premium pancake with texture sensations you’ve never experienced before, these light and fluffy pancakes will melt in your mouth. we hope that [these] pancakes can make you happy.

gram coffee and pancakes recipe for 2 pancakes

  • 1 egg yolk
  • 1/2 tablespoon of sugar
  • 2 tablespoons of milk
  • 3 tablespoons (30 grams) of flour
  • 1/4 teaspoon baking powder
  • whites

    • 2 large egg whites
    • 1/8 teaspoon cream of tartar
    • 1 tablespoon of sugar
    • Make the molds out of parchment paper. cut strips of parchment about 2 inches tall. Create a 4-inch circle and staple with a stapleless stapler.

      beat egg yolk with 1/2 tablespoon sugar until pale and foamy. mix the milk in batches. Sift the flour and baking powder over the egg yolk mixture and beat well, making sure everything is incorporated.

      beat the egg whites with the cream of tartar until foamy and pale, gradually adding the sugar until the whites blend into a thick, glossy meringue with a peak. be careful not to whip too hard.

      Take 1/3 of the beaten egg whites and beat them in the bowl with the yolks until fully incorporated. add half of the remaining whites and mix with the yolk mixture, being careful not to deflate them. transfer egg yolk mixture to remaining egg whites, whisk, then use spatula to combine.

      Heat a large nonstick skillet (with lid) over low heat. brush very lightly with oil and use a paper towel to rub it in. you want a very light movie.

      Place the parchment molds in the pan and fill about 80% of the way. cover and cook for 6-8 minutes. If you have a crepe maker or griddle with a lid that covers everything without touching the pancakes, use it on the lowest setting.

      Lift the lid and use a spatula to gently peek under the pancake. the pancake should release easily, don’t force it. flip, cover and cook for 5-6 minutes. once the pancakes are golden brown and cooked through, carefully remove them and remove the parchment. Serve on a plate with powdered sugar, butter, whipped cream, and maple syrup. enjoy it immediately!

      note: I was worried the parchment wouldn’t be enough to hold the dough up, so I also made some extra aluminum support rings.
